Blueberry Pie

makes one 9-inch pie


Pastry for two crust pie

Prepare the pie crust pastry using a 9-inch pie pan.

Heat the oven to 375 degrees F. Combine the sugar, flour, and grated lemon peel in a large bowl. Add the blueberries and the lemon juice and mix well. Spoon the mixture into the pie crust and dot the top of the pile with pieces of butter.

Cover with the remaining pastry and press together to seal. Use a fork to flute the crust rim and slice off any excess pastry from the overhanging top crust. Prick the top of the crust several times with the tines of a fork to vent. (It is a good idea to place the pie tin on a foil covered cookie sheet to catch any possible spills.)

Bake at 375 degrees F for about 40 to 45 minutes until crust is nicely browned. Serve warm with vanilla ice cream on top.
