Confetti Vegetable Rice

- 2 cups chicken broth
- 1 Tablespoon Butter
- 3/4 cup uncooked long grain rice
- 1/2 cup grated carrot
- 1/2 cup chopped celery
- 1 Tablespoon copped onion
- 1/2 cup frozen peas, thawed
Use a medium saucepan to heat the chicken broth and butter to boiling. Add all the vegetables except the peas and mix well.
Return to a boil, cover, and lower heat to simmer for about 20 minutes until liquid is absorbed.
Add the peas and cook an additional 5 minutes.
