
Minted Fruit Rice Salad

Serves 4.
- 2/3 cup Dole Pineapple Juice
- 1/3 cup water
- 1 cup instant rice
- 1 mcan(11 ounces) Dole Mandarin Oranges, drained
- 1 can (8 ounces) dole Crushed Pineapple, undrained
- 1/2 cup chopped cucumber
- 1/3 cup chopped red onion
- 3 Tablespoons chopped mint
Heat 2/3 cup Dole Pineapple Juice and 1/3 cup water in saucepan to
boiling. Stir in 1 cup instant rice. Remove from heat; cover and
let stand 10 minutes. In bowl, stir rice with 1 can (11 oz.) Dole
Mandarin oranges, drained, 1 can (8 oz.) Dole Crushed Pineapple,
undrained, 1/2 cup chopped cucumber, 1/3 cup chopped red onion, and
3 tbsp. chopped mint.
