Brown Rice Salad
6 to 8 servings
- 1 and 1/2 cups brown rice
- 3 large tomatoes, seeded and chopped
- 3/4 cup of sliced green onions
- 4 1/2 tablespoons olive oil
- 4 1/2 tablespoons vinegar
- 4 1/2 tablespoons capers
- salt and pepper to taste
- red or green lettuce leaves
Cook the rice according to package directions and cool to room
temperature. In a 3 quart bowl, combine tomatoes, green onions,
oil, vinegar and capers. Add rice and toss to coat. Season to
taste with salt and pepper. cover and refrigerate to chill.
To serve, stir the salad and spoon into lettuce lined bowl.
